MomBob’s Suggestions for Food Pairings

MomBobWine and food are: "boy & girl, day & night, soup & salad."  That’s what MomBob always said.  So recommended here are the following recipes right out of the MomBob archives of vaunted gourmet goodies.  So eat, drink and be Bob.

With our Mountain Rose’ 2007:


Chicken:


Sautéd Chicken In Sherry:

*Boneless chicken breast cut into strips

*Mix flour, garlic powder and lemon pepper (roll chicken stripes in to coat)

*Sauté in olive oil to a golden brown

*Pour 1/2 cup to 1 cup sherry into pan and let simmer for about 15

"Do not allow the sherry to evaporate"

Serve over cooked rice.


Cooked Chicken Salad

*3 cups diced cooked chicken

*1 cup diced celery

*2 tablespoons chopped onion

*1/2 can French fried onion rings (4oz ttl)

*1 can water chestnuts, diced

*1/2 cup sliced almonds

*1/2 cup grated cheddar cheese

*1/2 cup mayo and 2 tablespoon lemon juice combined

Combine all ingredients, transfer to a 1 1/2 quart casserole dish, lightly buttered. Put in preheated over at 350' and bake for 30 min.


Turkey:


Turkey Loaf L'Orange

*1 lb ground turkey mean

*1 slice ham ground

*1 egg

*1 glove garlic

*1/2 cup onion

*black pepper

*Bread crumbs

*milk

** mix above and put in loaf pan

for sauce mix the following:

*1/2 cup orange juice

*1/4 cup green bell pepper

1/2 cup chili sauce or Ketchup

*1 teaspoon mustard

*1/2 teaspoon garlic powder

*1 Tablespoon soy sauce

*1 Tablespoon molasses

Heat and pour over meat loaf

Back 350' for 1hour

Slice Oranges add to top of loaf in last cooking minutes

Note: during cooking you can baste with more sauce


Vegetarian:


Eggplant a'la MomBob

1 mid eggplant sliced 1/2 thick

Sauté slices in olive oil

Put sautéed eggplant in casserole dish (buttered)

sprinkle slices w/garlic powder, basil, pepper

lay thin slice of American cheese on 1st layer

Make up to 4 layers of eggplant and cheese

then put 3/4 to 1/2 cup spaghetti sauce over top layer, sprinkle with garlic parmesan, then cover and bake in 350 over for 30 min. You can also mix cheeses.


Fish:


Grilled Dijon-honey Salmon

4 salmon filets

lightly salt/pepper filets and set aside

Mix equal parts:

2 tablespoons honey / Dijon mustard and butter

heat in microwave until can mix well

Put Salmon filets in casserole pan and pour mixture over sprinkle fillets with bread crumbs/parsley and almond slices.

BBQ till flakey (keep off to side of BBQ do not put directly over flames.)


Beef:


BBQ'd Filet mignon w/blue cheese

2 filet mignon

lightly salt/pepper

BBQ

Just before pulling meat from grill add a little crumbled blue cheese

Put on plate and add more blue cheese. - Serve
