Eggplant a’la MomBob

  • 1 Medium Eggplant, Sliced ½ thick
  • ½ to ¾ Cup Spaghetti Sauce
  • American Cheese
  • Parmesan Cheese


  1. Sauté slices in olive oil
  2. Put sautéed eggplant in casserole dish (buttered)
  3. Sprinkle slices w/garlic powder, basil, pepper
  4. Lay thin slice of American cheese on 1st layer
  5. Make up to 4 layers of eggplant and cheese
  6. Then put ¾ to ½ cup spaghetti sauce over top layer, sprinkle with garlic parmesan, then cover and bake in 350 over for 30 min. You can also mix cheeses.
